Quick Cream of Broccoli Soup

Directions:

Serves 2. Preparation time: 10 minutes. Sattvic. Neutral effect on all doshas. Good in all seasons.

Bring to boil:

1 cup pure water Wash and coarsely chop: 1 small head of broccoli, about 1 1⁄2–2 cups chopped

Wash and slice in rounds:

1 tablespoon leek greens (optional) When the water is boiling, put the broccoli and leek greens in a stainless steel steamer in the pot and cover. Steam for 3 to 5 minutes at most, until the broccoli is bright green.

Grind together, dry, in the blender, until they are a fine powder:

2 tablespoons raw almonds or walnuts 1⁄2 teaspoon salt Pour in the steamed vegetables and their steaming water. Blend until smooth, adding more hot water if needed.

Serve with:

Freshly ground white pepper This makes a very quick and satisfying lunch, served with warm chapattis or hot corn tortillas.
