Preparation time: 10 minutes. Good for all seasons, most appropriate when fresh basil is in season. Sattvic, neutral for all doshas with salad.
1. Grind in a blender until fine: 1⁄4 c. raw walnuts or pine nuts
2. Add and blend together with the nuts until smooth: 1 c. fresh basil leaves, chopped 1 small clove garlic (optional, rajasic) 1⁄4 c. fresh lemon juice 1⁄4 c. extra-virgin olive oil 1⁄4–3⁄8 c. pure water
3. Dress, just before serving, or serve the dressing on the side of: 3 c. fresh baby mixed greens
