Crunchy Cookie Macaroon Recipe
This recipe calms vata and pitta and is neutral for kapha. It is light enough for almost anybody to indulge in occasionally.
Ingredients:
2 egg whites 1⁄2 cup Sukanat (an organic evaporated cane juice) 1 chopped date 4–inch slice of dried, unsweetened papaya 1 teaspoon vanilla extract 1⁄3 cup toasted cashews 2 cups unsweetened, flaked coconut
Directions:
Preheat the oven to 300°. Beat the egg whites until they are stiff enough to peak. Fold in the Sukanat, the date, papaya, vanilla, cashews, and coconut. Spoon onto a lightly greased cookie sheet. Bake for 10–12 minutes. Use your nose; when they begin to fill the room with their wonderful smell, the cookies are done. If you let them go too long, they quickly burn.
