How we eat is vitally important to our brain! Susan explains why the brain needs good-quality carbohydrates, proteins, and fats—the macronutrients—in order to have the energy and materials to do its job. She describes the important role of vitamins and minerals—the micronutrients—in breaking down and converting the macronutrients so that the brain can use them. Susan suggests that we also consider the relaxing effect of carbohydrates and the stimulating effect of protein in looking at our daily activities and our ayurvedic constitution.
