How to Prepare Ghee

In ayurveda, ghee is a medicinal oil that nourishes agni for greater health and vitality. When used for cooking, ghee helps to break down food and assimilate nutrients to the tissues, enhancing the functions of mind and body. 1 lb unsalted butter

Heat butter on medium. Once butter melts, heat for about twelve more minutes. Foam will rise to the surface as the butter boils; this foam contains medicinal properties. Reduce heat to low and look for the ghee to turn a golden yellow color. Test by splashing a drop of water into the ghee; if the water makes a crackling sound, the ghee is ready. Remove from heat and let cool. Pour through strainer and store at room temperature.
