Missing Egg Salad Recipe

This is the quickest of the three sandwich fillings to prepare. It is also a great substitute for traditional egg salad if you’re watching your cholesterol or if you don’t eat eggs. You can also stuff it in cherry tomatoes as an hors d’oeurve.


1 pound tofu, drained
2 tablespoons tahini
4 tablespoons nutritional yeast
2 tablespoons pickle, chopped
2 tablespoons onion, minced
1 rib celery, chopped
1 tablespoon prepared mustard
1⁄4 teaspoon garlic powder
1⁄4 teaspoon black pepper
1⁄4 teaspoon turmeric
1⁄2 teaspoon salt

Mash the tofu with a fork. Combine remaining ingredients, mix thoroughly, and you’re done.
